Choc Raspberry Muffin Slice
this recipe for grain free Chocolate Raspberry Muffins and just had to try it. Too good to be true? Whilst they tasted delicious and had a moist and light consistency, our mini muffins didn't really hold together very well. I wonder perhaps whether measuring by cup was a little hit and miss? Anyway, first thoughts were to eat the yummy mess in a bowl a bit like a pudding with cream or ice cream, but instead I squished the whole lot into a slice tin, added some extra raspberries and popped it in the freezer. Happy to report that it slices well, and once at room temperature it tastes truly amazing. It's my new "go to" recipe when I'm hanging out for a cherry ripe. I may just add some coconut next time.
